Mini Apple Cinnamon Muffins
Gluten-free, sugar free, fat free, dairy free and salt free
Makes about 20 mini muffins
1 cup uncooked old-fashioned oatmeal
1/2 cup almond milk
1 1/2 medium apples
1 egg white
5 tsps stevia
1/4 tsp cinnamon
1 tsp baking powder
1 tbls cup dried cranberries
1/8 cup chopped walnuts
Add 1/2 cup of oats to almond milk and set aside for about 15 mins. Grind up 1/2 cup of oats to consistency of flour.
Peel, core and chop one apple. Add water, one teaspoon of stevia and cook in small saucepan over medium heat until apples soften. Mash apples in food processor.
Beat the egg white and apple sauce together. Mix in almond milk with oats.
Mix oat flour with baking soda, cinnamon and 4 tsps stevia. Peel, core and chop 1/2 apple and add to flour, with chopped walnuts and dried cranberries.
Mix dry ingredients into wet ingredients. Spray muffin tins liberally and spoon batter into tins.
Bake for 9 mins at 450F. Keep an eye on them so they don't burn.
