Blueberry Mini Muffins
Gluten-free, sugar free, fat free, dairy free and salt free
Makes about 20 mini muffins
1 cup gluten free flour (I used Bob's Red Mill Gluten Free All Purpose Baking Flour)
2 tsps baking soda
2 tsps stevia
1 large egg white
1/2 medium apple (I used an Idared, cause it was what I had)
2 tbls agave
2 tbls lemon juice
1/2 cup almond milk
3/4 cup fresh or unthawed frozen blueberries
Peel, core and chop up the half an apple, add a touch of water and microwave for two minutes. Mash up in food processor.
Beat the egg white and add apple sauce. Mix in lemon juice and agave. Add in almond milk.
Mix flour with baking soda and stevia. Mix dry ingredients into wet ingredients.
Fold in blueberries (frozen or fresh). Spray muffin tins liberally and spoon in batter.
Bake at 450F for 8-9 mins. Keep an eye on them, as they can overcook quickly.
